The Jeonbuk Provincial Office of Education is operating a training program called 'Enhancing Low-Carbon Environmental Meals Capacity' to address climate crisis and achieve sustainable school meals.
The training, held in a location in Gokseong, Jeonnam on the 9th, has over 40 participants including those responsible for implementing low-carbon environmental meals in schools by 2026, nutrition teachers, and dietitians.
The program aims to increase on-site understanding of low-carbon environmental meal policies and enhance the capacity to operate vegetarian meals. Key contents include understanding low-carbon environmental meal policies for climate crisis response, strategies for reducing carbon footprint through vegetarian diet operation, sharing of school operation cases, and development of recipes and programs to promote vegetarianism.
In particular, agricultural scientist Lee Dong-hyun, the CEO of Miland, will give a special lecture on 'Sustainable School Meals that Reduce Carbon Footprint'. The CEO is expected to present changes in food consumption in the era of climate crisis, the role of school meals, and design strategies for low-carbon diets.
The Jeonbuk Provincial Office of Education is promoting initiatives such as expanding the operation of low-carbon meals once a week, utilizing locally produced eco-friendly ingredients, and designing menus considering carbon emission reduction through the low-carbon environmental meal policy.
Im Young-geun, the head of the Department of Arts, Culture, and Health at the Jeonbuk Provincial Office of Education, stated, "Low-carbon environmental meals are not just about dietary changes but an educational activity that realizes climate crisis response and student health together," and added, "We will expand support and training to ensure stable implementation at school sites."

전북교육청이 기후위기 대응과 지속가능한 학교급식 실현을 위해 ‘저탄소 환경급식 역량 강화 연수’를 운영한다.
이번 연수는 9일 전남 곡성 일원에서 열리며, 2026년 저탄소 환경급식 실천학교 운영 담당자와 영양교사, 영양사 등 40여 명이 참여한다.
연수는 저탄소 환경급식 정책에 대한 현장 이해도를 높이고, 채식 급식 운영 역량을 강화하기 위해 마련됐다. 주요 내용은 기후위기 대응을 위한 저탄소 환경급식 정책 이해, 탄소발자국을 줄이는 채식 식단 운영 전략, 학교 현장 운영사례 공유, 채식 활성화를 위한 레시피 및 프로그램 개발 등이다.
특히 농부과학자인 이동현 미실란 대표가 ‘탄소발자국을 줄이는 지속가능한 학교급식’을 주제로 특강을 진행한다. 이 대표는 기후위기 시대 먹거리 변화와 학교급식의 역할, 저탄소 식단 설계 방안 등을 제시할 예정이다.
전북교육청은 저탄소 환경급식 정책을 통해 주 1회 저탄소 급식 운영 확대, 지역산 친환경 식재료 활용, 탄소배출 저감을 고려한 식단 구성 등을 추진하고 있다.
임영근 전북교육청 문예체건강과장은 “저탄소 환경급식은 단순한 식단 변화가 아니라 기후위기 대응과 학생 건강을 함께 실현하는 교육활동”이라며 “학교 현장에 안정적으로 정착될 수 있도록 지원과 연수를 확대하겠다”고 말했다.
